Assorted No-Bake Holiday Truffle Bites are an easy and festive Christmas candy made with a creamy base and rolled in colorful, crunchy, or sparkly coatings. These bite-sized treats are perfect for cookie platters, dessert trays, or edible gifts.

Ingredients

  • 8 oz cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 2 cups semi-sweet or white chocolate chips, melted and cooled slightly
  • 1 tsp vanilla extract
  • Assorted coatings (crushed candy canes, holiday sprinkles, shredded coconut, cocoa powder, crushed cookies, chopped nuts)

Instructions

  1. In a large bowl, beat cream cheese until smooth.
  2. Add powdered sugar gradually and mix until fully incorporated.
  3. Stir in melted chocolate and vanilla extract. Mix until smooth and creamy.
  4. Cover and refrigerate the mixture for at least 1 hour, or until firm enough to shape.
  5. Once chilled, scoop and roll mixture into 1-inch balls using a spoon or small cookie scoop.
  6. Roll each truffle in your choice of festive coating (sprinkles, candy canes, coconut, etc.).
  7. Place coated truffles on a parchment-lined baking sheet and chill for another 30 minutes to set.
  8. Store in an airtight container in the refrigerator until ready to serve.

Notes

  • Use gloves when rolling to keep the mixture from sticking to your hands.
  • Customize with extracts (mint, almond, orange) or swap in flavored chocolate chips.
  • Truffles can be frozen for up to 1 month—thaw before serving.
