Bacon-Wrapped Chicken with Cheddar Garlic Cauliflower Mash is a low-carb, high-protein comfort meal featuring juicy chicken wrapped in crispy bacon, served over a creamy, cheesy cauliflower mash. Perfect for weeknight dinners or special occasions, it’s satisfying and keto-friendly.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 812 strips of bacon
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 large head cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy cream or milk
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper. Wrap each with 2–3 strips of bacon, tucking ends underneath or securing with toothpicks.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken on all sides until browned.
  4. Transfer skillet to oven and bake for 20–25 minutes, until internal temperature reaches 165°F (75°C).
  5. Meanwhile, steam cauliflower florets until tender, about 10 minutes. Drain well.
  6. In a food processor, blend steamed cauliflower with minced garlic, cheddar cheese, cream, salt, and pepper until smooth and creamy.
  7. To serve, spoon cauliflower mash onto plates and top with bacon-wrapped chicken. Garnish with fresh herbs if desired.

Notes

  • For extra crisp bacon, broil the chicken for 2–3 minutes at the end of baking.
  • Use a food processor or blender for the smoothest cauliflower mash.
  • Make the mash ahead and reheat with a splash of cream.
