Baked Broccoli and Cheese is a wholesome and comforting dish that combines finely chopped broccoli with melty cheese, herbs, and crispy breadcrumbs, baked to golden perfection. It’s perfect as a side or vegetarian main.

Ingredients

  • 2 cups fresh or frozen broccoli, steamed and finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup bread crumbs (preferably panko)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Steam or blanch the broccoli until just tender. Drain and finely chop.
  3. In a large bowl, combine chopped broccoli, cheddar cheese, Parmesan cheese, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Form the mixture into small logs or nuggets using your hands or a scoop.
  5. Place on the prepared baking sheet and lightly spray with olive oil.
  6. Bake for 22–25 minutes, flipping halfway through, until golden brown and crisp.
  7. Serve warm with your favorite dipping sauce.
