Units Scale
  • 4 fresh cod fillets
  • 2 cups cherry tomatoes
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs (parsley, thyme, dill, or combination), finely chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cod fillets in a baking dish and arrange the cherry tomatoes around them.
  3. In a small saucepan over low heat, melt the butter. Stir in the minced garlic, lemon zest, lemon juice, and chopped herbs.
  4. Pour the lemon-herb butter evenly over the cod and cherry tomatoes.
  5. Drizzle olive oil over the tomatoes and season everything with salt and pepper.
  6. Bake for 15–18 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Serve immediately, spooning roasted tomatoes and butter sauce over each fillet.

Notes

  • Add red pepper flakes to the butter for a spicy version.
  • Incorporate olives or capers for a Mediterranean twist.
  • Use dairy-free butter or olive oil for a dairy-free option.
  • Add vegetables like zucchini or bell peppers for variety.
  • Store leftovers in an airtight container for up to 2 days.
  • Reheat in the oven at 300°F (150°C) to avoid rubbery texture.
