8 oz halloumi cheese, sliced into 1/2-inch thick pieces
2 cups cherry tomatoes
2 tbsp olive oil
2–3 sprigs fresh thyme (or 1 tsp dried thyme)
1 clove garlic, minced
Salt and pepper to taste
Fresh basil or parsley, chopped (optional, for garnish)
Crusty bread (optional, for serving)
Instructions
Preheat oven to 400°F (200°C).
Place cherry tomatoes in a baking dish and drizzle with olive oil. Add garlic, thyme, salt, and pepper. Toss to combine.
Nestle halloumi slices between the tomatoes in the dish.
Bake for 20–25 minutes, or until tomatoes are blistered and halloumi is golden brown.
Optional: broil for the last 2–3 minutes for extra color on the cheese.
Garnish with fresh basil or parsley if desired, and serve with crusty bread.
Notes
Halloumi doesn’t melt, making it ideal for baking or grilling.
Use multicolored cherry tomatoes for a more vibrant dish.
Add a drizzle of balsamic glaze before serving for extra depth.
