8 oz halloumi cheese, sliced into 1/2-inch thick pieces
2 cups cherry tomatoes
2 tbsp olive oil
1 tsp fresh thyme leaves (or 1/2 tsp dried)
1 clove garlic, minced

Fresh basil or parsley (optional, for garnish)
Crusty bread (optional, for serving)
Instructions
Preheat oven to 400°F (200°C).
Place cherry tomatoes in a baking dish and drizzle with olive oil. Add garlic, thyme, salt, and pepper. Toss to combine.
Arrange the halloumi slices among the tomatoes in the dish.
Bake for 20–25 minutes, or until the tomatoes are blistered and the halloumi is golden and slightly crisp on the edges.
Remove from oven and let cool slightly.
Garnish with fresh basil or parsley if desired, and serve with crusty bread.
