Tender and juicy baked lemon garlic chicken drumsticks with a zesty, savory marinade. This simple and flavorful recipe is perfect for an easy weeknight dinner or meal prep.

Ingredients

Scale
  • 8 chicken drumsticks (about 2.5 lbs)
  • 3 tbsp olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, pepper, oregano, and paprika.
  3. Add chicken drumsticks to the bowl and toss to coat evenly. Let marinate for at least 15–30 minutes (or overnight for more flavor).
  4. Arrange drumsticks in a single layer on the prepared baking sheet.
  5. Bake for 35–45 minutes, flipping halfway through, until chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  6. Garnish with fresh parsley before serving, if desired.

Notes

  • Marinate the chicken overnight for maximum flavor.
  • You can broil the drumsticks for 2–3 minutes at the end for crispier skin.
  • Pairs well with rice, roasted vegetables, or a fresh salad.
  • Leftovers can be stored in the fridge for up to 3 days.
