1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup mashed ripe banana (about 1 large banana)
1/3 cup granulated sugar
1/4 cup brown sugar
1/4 cup unsalted butter, melted
1/4 cup milk
1 large egg
1 tsp vanilla extract
Banana Glaze:
1 cup powdered sugar
2–3 tbsp mashed banana
1–2 tsp milk (as needed)
1/4 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease a donut pan lightly.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, mix mashed banana, granulated sugar, brown sugar, melted butter, milk, egg, and vanilla until smooth.
Combine dry ingredients with the wet mixture and stir just until incorporated.
Spoon or pipe the batter into the donut cavities, filling each about 3/4 full.
Bake for 10–12 minutes, or until the donuts spring back when touched. Cool on a wire rack.
For the glaze, whisk powdered sugar, mashed banana, vanilla, and a splash of milk until smooth and pourable.
Dip cooled donuts into the glaze and place on a rack to set.
Notes
Use very ripe bananas for the best flavor.
Do not overmix the batter to keep donuts light and tender.
Add cinnamon or nutmeg for extra warmth.
For a thinner glaze, add more milk; for thicker, add more powdered sugar.
