Notes

  • For a different protein, use chicken or tofu.
  • Bell peppers or snap peas add extra color and crunch.
  • If egg noodles are unavailable, substitute rice noodles or spaghetti.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water if needed.
  • Add chili or chili sauce for extra spiciness.
  • Frozen broccoli works well, but thaw and drain it to avoid excess water in the stir-fry.
  • For a gluten-free version, use gluten-free soy sauce and noodles.
  • Flank steak or sirloin is ideal for stir-frying.
  • To make it vegetarian, replace beef with tofu or tempeh and use vegetarian oyster sauce.
  • Egg noodles, ramen noodles, or even spaghetti work well as substitutes for the noodles.
  • A quick marinade of soy sauce and cornstarch helps tenderize the beef.
  • Feel free to add other vegetables such as carrots, mushrooms, or baby corn.
  • To prevent the noodles from sticking, toss them in a little oil before adding to the stir fry.
