1 lb flank steak, thinly sliced against the grain
3 cups broccoli florets
2 tbsp vegetable oil
3 cloves garlic, minced
1 tsp fresh ginger, grated
1/3 cup low-sodium soy sauce
2 tbsp brown sugar
1 tbsp cornstarch
1 tbsp oyster sauce
1/4 cup beef broth or water
1 tsp sesame oil
1/4 tsp black pepper
Instructions
In a small bowl, whisk together soy sauce, brown sugar, cornstarch, oyster sauce, beef broth, sesame oil, and black pepper. Set aside.
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add broccoli and cook for 3–4 minutes until crisp-tender. Remove and set aside.
Add remaining oil to the skillet. Add sliced beef and cook for 2–3 minutes until browned.
Stir in garlic and ginger; cook for 30 seconds until fragrant.
Return broccoli to the skillet and pour the sauce over the mixture.
Stir and cook for 2–3 more minutes until the sauce thickens and everything is well coated.
Serve hot over rice or noodles.
Notes
Freeze the steak for 20 minutes before slicing for thinner, easier cuts.
Add red pepper flakes or Sriracha for heat.
Substitute chicken or tofu for a different protein.
