Ingredients

  • Beef (sirloin, ribeye, or stew beef), cut into bite-sized cubes
  • Potatoes, peeled and cubed
  • Olive oil or vegetable oil
  • Onion, chopped
  • Garlic, minced
  • Beef broth
  • Worcestershire sauce (optional)
  • Fresh or dried thyme
  • Fresh or dried rosemary
  • Salt
  • Black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add beef cubes and sear until browned on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed and sauté the potatoes until golden brown and nearly tender, about 10-12 minutes.
  4. Add the onion and garlic; cook until softened.
  5. Return the beef to the skillet. Stir in beef broth, Worcestershire sauce (if using), thyme, rosemary, salt, and pepper.
  6. Cover and simmer over low heat for 5-10 minutes, until the beef is cooked through and the potatoes are tender.
  7. Garnish with fresh parsley and serve hot.
