Beef Stroganoff with Rice is a comforting classic featuring tender strips of beef in a creamy, savory sauce, served over fluffy rice for a hearty and satisfying meal.

Ingredients

  • 1 lb beef sirloin or tenderloin, sliced into thin strips
  • 2 tablespoons olive oil or butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • Salt, to taste
  • Black pepper, to taste
  • 4 cups cooked white or brown rice
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Sear beef strips until browned. Remove and set aside.
  3. Sauté onion and garlic in the same skillet until translucent.
  4. Add mushrooms and cook until browned and their juices have released.
  5. Stir in flour if using; cook 1 minute.
  6. Gradually add beef broth, stirring to deglaze and simmer 3-5 minutes until slightly thickened.
  7. Return beef to skillet; stir in sour cream and Dijon mustard if using. Season with salt and pepper.
  8. Simmer briefly until heated through. Serve over cooked rice and garnish with parsley.
