Berry Crumble Bars are a sweet and tart dessert featuring a buttery crumb base, a juicy mixed berry filling, and a golden, crumbly topping. Easy to make and perfect for any occasion, they’re ideal for parties, picnics, or tea time.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar (for filling)
  • 2 tsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, salt, and baking powder. Cut in butter until the mixture is crumbly.
  3. Add egg and vanilla extract; mix to form a crumbly dough.
  4. Press half the mixture into the bottom of the prepared pan to form the crust.
  5. In another bowl, toss berries with 2 tbsp sugar, cornstarch, and lemon juice.
  6. Spread berry mixture evenly over the crust layer.
  7. Sprinkle remaining crumble dough on top of the berry layer.
  8. Bake for 35–40 minutes, or until the top is golden and the filling is bubbly at the edges.
  9. Let bars cool completely before cutting into squares and serving.

Notes

  • Swap in cherries, peaches, or apples for different fruit flavors.
  • Add chopped nuts to the crumble for extra crunch.
  • Use a gluten-free flour blend for a gluten-free version.
  • Mix in shredded coconut for a tropical twist.
