1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup rainbow sprinkles (plus more for topping)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the egg and vanilla extract, beating until well combined.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the sprinkles evenly.
Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
Press a few extra sprinkles onto the tops for decoration.
Bake for 10–12 minutes or until the edges are just beginning to turn golden.
Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
Notes
Don’t overbake to keep the centers soft and chewy.
Chill dough for 20–30 minutes if it’s too soft to handle.
Use jimmies-style sprinkles, not nonpareils, to avoid color bleeding.
Store in an airtight container for up to 5 days at room temperature.
