  • 1/4 cup cocoa powder
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp melted butter

For the Blackberry Drizzle:

  • 1 cup blackberries (fresh or frozen)
  • 1/4 cup sugar
  • 1/2 tsp lemon juice
  • 1/2 cup heavy cream

For Garnish:

  • Fresh blackberries
  • Powdered sugar

Instructions

  • Make the Pancake Batter: In a bowl, whisk together the dry ingredients. In another bowl, whisk the wet ingredients. Combine and mix until smooth.
  • Make the Chocolate Pancake Batter: Repeat the same process with the cocoa powder mix.
  • Cook the Pancakes: Heat a skillet over medium heat, grease lightly, and cook each batter separately. Flip when bubbles appear.
  • Prepare the Blackberry Drizzle: In a saucepan, heat blackberries, sugar, and lemon juice until thickened. Blend and strain for a smooth sauce. Stir in cream.
  • Assemble: Stack alternating layers of classic and chocolate pancakes. Drizzle with the blackberry glaze and top with a fresh blackberry.
