1 1/2 cups all-purpose flour
1/2 cup rolled oats
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp salt
3/4 cup unsalted butter, melted
Blackberry Layer:
2 cups fresh or frozen blackberries
1/3 cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
In a bowl, mix flour, oats, granulated sugar, brown sugar, baking powder, and salt.
Stir in the melted butter until the mixture forms soft crumbs.
Press two-thirds of the crumb mixture into the bottom of the pan to form the crust.
In another bowl, toss blackberries with sugar, lemon juice, and cornstarch.
Spread the blackberry mixture evenly over the crust.
Sprinkle the remaining crumb mixture on top.
Bake for 30–35 minutes, or until the top is golden and the filling is bubbling.
Cool completely before slicing into bars.
Notes
Frozen blackberries work perfectly—no need to thaw.
Add a pinch of cinnamon to the crumbs for extra warmth.
Bars slice more cleanly after chilling for 1 hour.
Substitute blackberries with raspberries or blueberries if desired.
