Braised Beef with Cheesy Noodles is a comforting, slow-cooked dish featuring tender beef simmered in a rich sauce, served over creamy, cheese-laden egg noodles for a hearty and satisfying meal.

Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup red wine (optional)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 12 oz egg noodles
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Chopped parsley for garnish (optional)

Instructions

  1. Season beef chunks with salt and pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef on all sides until browned. Remove and set aside.
  3. In the same pot, sauté onion until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in tomato paste, then deglaze with red wine (if using). Cook for 2 minutes.
  5. Add beef broth, thyme, and rosemary. Return beef to the pot and bring to a simmer.
  6. Cover and braise on low heat for 2.5 to 3 hours, or until beef is fork-tender.
  7. Meanwhile, cook egg noodles according to package directions. Drain and return to the pot.
  8. Add butter, sour cream, and shredded cheddar cheese to the noodles. Stir until creamy and smooth.
  9. Serve braised beef over cheesy noodles and garnish with chopped parsley if desired.

Notes

  • For extra richness, use a mix of cheddar and Parmesan in the noodles.
  • Can be made ahead and reheated for even better flavor.
  • Leftovers make a great lunch the next day.
