Braised Beef with Cheesy Noodles is a comforting and hearty dish featuring tender, slow-cooked beef in a rich savory sauce served over creamy, cheesy egg noodles.

Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup red wine (optional, or use beef broth)
  • 2 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 12 oz egg noodles
  • 2 tbsp butter
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Season the beef chunks with salt and pepper.
  2. In a large Dutch oven or heavy pot, heat oil over medium-high heat. Brown the beef on all sides, then remove and set aside.
  3. In the same pot, sauté the onion until softened, about 5 minutes. Add garlic and tomato paste, cook for 1 minute.
  4. Deglaze the pot with red wine (if using), scraping up any brown bits. Simmer for 2 minutes.
  5. Return beef to the pot. Add beef broth, thyme, and rosemary. Bring to a simmer.
  6. Cover and braise in a 325°F (160°C) oven for 2.5 to 3 hours, until beef is fork-tender.
  7. Meanwhile, cook the egg noodles according to package instructions. Drain and return to the pot.
  8. Add butter, milk, and shredded cheese to the noodles. Stir until creamy and cheese is melted.
  9. Serve the braised beef over the cheesy noodles. Garnish with parsley if desired.

Notes

  • Beef can also be braised on the stovetop at a low simmer if oven unavailable.
  • Use a mix of cheeses like mozzarella or Parmesan for added flavor.
  • Leftovers store well and taste even better the next day.
