Braised Beef with Cheesy Pasta is a hearty and comforting dish featuring tender, slow-cooked beef in a rich sauce, served over creamy, cheesy pasta. Perfect for cozy dinners or special occasions.

Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 12 oz pasta (such as rigatoni or penne)
  • 2 tbsp butter
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the beef chunks until browned on all sides. Remove and set aside.
  3. In the same pot, add chopped onion and cook until softened. Add garlic and tomato paste, cook for 1-2 minutes.
  4. Deglaze with red wine, scraping up any browned bits. Add beef broth, thyme, rosemary, salt, and pepper. Return beef to the pot.
  5. Cover and transfer to oven. Braise for 2.5 to 3 hours, or until beef is fork-tender.
  6. Cook pasta according to package instructions. Drain and return to pot.
  7. Stir in butter, heavy cream, mozzarella, and Parmesan until cheese is melted and pasta is creamy.
  8. Serve braised beef over cheesy pasta. Spoon extra sauce from the pot over the top.

Notes

  • Use a heavy-bottomed Dutch oven for even heat distribution.
  • The beef can be braised a day ahead and reheated for even better flavor.
  • Feel free to use different cheese blends to suit your taste.
