Buffalo Chicken Quesadillas are a spicy, cheesy, and satisfying dish combining shredded chicken tossed in tangy buffalo sauce with melted cheese, all grilled between crispy tortillas. Perfect for game day, quick dinners, or a bold snack.

  • 2 cups cooked shredded chicken
  • 1/3 cup buffalo wing sauce
  • 1 tbsp ranch or blue cheese dressing (optional)
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp butter or oil (for grilling)
  • Optional: chopped green onions, diced red onion, or crumbled blue cheese

Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce and dressing (if using).
  2. Heat a skillet over medium heat and lightly butter or oil one side of a tortilla. Place it buttered side down in the skillet.
  3. Sprinkle half with shredded cheese, then spoon the buffalo chicken mixture on top. Add more cheese and optional toppings if desired. Fold the tortilla over.
  4. Cook for 2–3 minutes on each side until the tortilla is golden and the cheese is melted. Repeat with remaining tortillas.
  5. Slice into wedges and serve hot with extra buffalo sauce, ranch, or blue cheese for dipping.
