Ingredients

  • 1 sheet puff pastry, thawed

  • 2 large onions, thinly sliced

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp sugar

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup shredded Gruyère or sharp white cheddar

  • 1/4 cup grated Parmesan

  • Fresh thyme leaves or chopped parsley (optional)

  • 1 egg, beaten (for egg wash)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Heat olive oil and butter in a skillet over medium-low. Add onions, sugar, salt, and pepper. Cook 20–25 minutes until golden and caramelized, stirring occasionally.

  • Roll out puff pastry and cut into circles or squares (about 3-inch diameter).

  • Place on baking sheet. Score a smaller circle inside each piece without cutting through, to create a border.

  • Fill center with caramelized onions and top with cheeses.

  • Brush pastry edges with beaten egg.

  • Bake for 15–18 minutes until puffed and golden.

 

  • Garnish with fresh herbs and serve warm.

  • Use mini muffin tins for bite-sized versions.

  • Add cooked bacon or roasted garlic for extra depth.
