Soft, spiced Carrot Cake Sandwich Cookies filled with luscious cream cheese frosting—these are the ultimate dessert for carrot cake lovers!

For the cookies:

 

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup grated carrots

Instructions

  • Preheat oven to 350°F (175°C).
  • Cream butter and sugar until smooth. Add egg and vanilla.
  • Mix in flour, baking soda, cinnamon, and grated carrots.
  • Drop spoonfuls of dough onto a baking sheet and bake for 10-12 minutes.
  • Cool completely before adding filling.
  • Beat cream cheese, powdered sugar, and vanilla together.
  • Spread filling onto one cookie and sandwich with another.
