Ingredients

Units Scale
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 1/2 cups shredded sharp cheddar cheese
  • 2 fresh jalapeños, chopped (seeds removed for less heat)
  • 1/2 tsp garlic powder (optional)
  • 1/4 cup chopped scallions or green onions (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a standard loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, sugar, and garlic powder.
  3. In a separate bowl, whisk together the milk, eggs, and melted butter.
  4. Stir the wet ingredients into the dry ingredients just until combined.
  5. Fold in the shredded cheddar cheese, chopped jalapeños, and scallions if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use pepper jack cheese for more heat.
  • Swap fresh jalapeños for green chilies for a milder version.
  • Add cooked bacon bits for extra flavor.
  • Top with extra cheese before baking for a crispy cheesy crust.
  • Makes great muffins—adjust bake time to 20–25 minutes.
