  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, finely chopped
  • 1/2 cup corn kernels (optional)
  • 1 can (14 oz) tomato sauce or crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned; drain excess fat if needed.
  3. Add onion and garlic; sauté until softened.
  4. Stir in bell pepper, zucchini, carrot, and corn. Cook 5-7 minutes until vegetables are tender.
  5. Add tomato sauce, oregano, basil, salt, and pepper. Simmer 5 minutes, stirring occasionally.
  6. Sprinkle cheddar and mozzarella evenly over the mixture.
  7. Cover and cook on low until cheese is melted and bubbly, about 3-5 minutes.
  8. Garnish with parsley and serve hot.
