Cheesy Beef Birria Quesadillas are a crispy, melty delight filled with tender shredded birria beef and cheese, served with a flavorful consommé for dipping.

Ingredients

  • 2 cups shredded birria beef
  • 8 flour tortillas
  • 2 cups shredded cheese (Oaxaca or Monterey Jack)
  • 1 cup birria consommé
  • 1/2 cup chopped onions
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Prepare the birria beef by slow-cooking it with traditional spices until tender, then shred it.
  2. Lay out a tortilla and place a layer of shredded beef and cheese on one half.
  3. Fold the tortilla over to form a half-moon shape.
  4. Heat a skillet over medium heat and pan-fry the quesadillas until golden brown and crispy on both sides.
  5. Remove from skillet, cut into wedges, and garnish with chopped onions, cilantro, and a squeeze of lime.
  6. Serve with a side of warm birria consommé for dipping.

Notes

  • Use corn tortillas for a more traditional variation.
