Cheesy Beef Enchiladas are a comforting Tex-Mex dish made with seasoned ground beef, gooey melted cheese, and soft flour tortillas all smothered in rich red enchilada sauce. Perfect for weeknight dinners or feeding a crowd.

Ingredients

  • 1 lb ground beef
  • 8 flour tortillas
  • 2 cups red enchilada sauce
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar or Mexican cheese blend
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional for garnish)
  • Diced tomatoes or jalapeños (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, and sauté until translucent.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in cumin, chili powder, salt, and pepper. Cook for another 2–3 minutes.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with beef mixture and some cheese. Roll and place seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the tortillas and top with remaining cheese.
  8. Bake for 20–25 minutes, or until cheese is melted and bubbly.
  9. Garnish with cilantro, diced tomatoes, or jalapeños if desired.

Notes

  • Use corn tortillas if preferred, but soften them first to avoid tearing.
  • Make ahead and refrigerate before baking for easy prep.
  • Add vegetables like bell peppers or corn to the filling for variety.
  • Freeze before or after baking for up to 2 months.
  • Top with sour cream or guacamole before serving.
