- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup corn kernels
- 1 tsp chili powder
- 1 tsp cumin
- 1 can enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- Fresh cilantro for garnish
- Preheat oven to 375°F (190°C).
- Cook beef, onion, and garlic in a skillet. Drain fat.
- Stir in corn, chili powder, cumin, and ½ cup enchilada sauce.
- Fill tortillas with beef mixture, roll up, and place in a baking dish.
- Pour remaining sauce over and sprinkle cheese.
- Bake for 25 minutes. Garnish with cilantro.
Notes
- Use corn tortillas for a more authentic taste.
- Add jalapeños for extra heat.
