A hearty and flavorful Mexican-inspired dish with melted cheese and seasoned beef wrapped in tortillas.

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • Fresh cilantro for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook beef, onion, and garlic in a skillet. Drain fat.
  • Stir in corn, chili powder, cumin, and ½ cup enchilada sauce.
  • Fill tortillas with beef mixture, roll up, and place in a baking dish.
  • Pour remaining sauce over and sprinkle cheese.
  • Bake for 25 minutes. Garnish with cilantro.

Notes

  • Use corn tortillas for a more authentic taste.
  • Add jalapeños for extra heat.
