Cheesy Chicken and Broccoli Skillet

A quick and delicious one-pan meal featuring tender chicken, fresh broccoli, and melted cheese in a creamy sauce. Perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 cups broccoli florets
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1/2 tsp paprika (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, add the diced onion and cook until soft, about 3-4 minutes. Add the garlic and cook for another 30 seconds.
  3. Add the broccoli florets and pour in the chicken broth. Cover and steam for about 5 minutes until the broccoli is tender.
  4. Return the cooked chicken to the skillet. Stir in the heavy cream and bring to a simmer.
  5. Sprinkle the shredded cheddar cheese over the top and stir until melted and creamy.
  6. Season with salt, pepper, and paprika if using. Serve warm.

Notes

  • Use rotisserie chicken for an even quicker meal.
  • Try adding cooked rice or pasta to make it more filling.
  • Can substitute half-and-half for heavy cream for a lighter option.
