1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 cups broccoli florets
1 small onion, diced
2 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1 cup shredded cheddar cheese
Salt and pepper to taste
1/2 tsp paprika (optional)
Instructions
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
In the same skillet, add the diced onion and cook until soft, about 3-4 minutes. Add the garlic and cook for another 30 seconds.
Add the broccoli florets and pour in the chicken broth. Cover and steam for about 5 minutes until the broccoli is tender.
Return the cooked chicken to the skillet. Stir in the heavy cream and bring to a simmer.
Sprinkle the shredded cheddar cheese over the top and stir until melted and creamy.
Season with salt, pepper, and paprika if using. Serve warm.
Notes
Use rotisserie chicken for an even quicker meal.
Try adding cooked rice or pasta to make it more filling.
Can substitute half-and-half for heavy cream for a lighter option.
