1lb ground beef
1 small onion, chopped
2 bell peppers, diced (any color)
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
2 tbsp tomato paste
1 can (15 oz) black beans or kidney beans (optional), drained and rinsed
1 tsp chili powder
1/2 tsp ground cumin
Salt and black pepper, to taste
1 1/2cups shredded cheddar cheese
2 tbsp fresh parsley or cilantro, chopped (for garnish)
Instructions
In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add onion, bell peppers, and garlic. Sauté for 5–6 minutes until vegetables are softened.
Stir in diced tomatoes, tomato paste, beans (if using), chili powder, cumin, salt, and pepper.
Simmer uncovered for 10–12 minutes, stirring occasionally.
Sprinkle shredded cheddar cheese over the top and cover until cheese is melted.
Garnish with chopped parsley or cilantro and serve warm.
Notes
Use ground turkey or chicken as a leaner alternative.
Customize heat with jalapeños or hot sauce.
Serve with rice, tortilla chips, or inside taco shells.
