Cheesy Rice Pilaf is a creamy, savory rice dish made with butter, broth, and melted cheese. It’s a comforting and versatile side or main dish perfect for any occasion.

Ingredients

  • 1 cup long grain white rice
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a medium saucepan, melt butter over medium heat.
  2. Add chopped onion and sauté for about 4 minutes until soft and translucent.
  3. Stir in minced garlic and cook for 1 more minute.
  4. Add the rice and toast it in the butter for 2–3 minutes, stirring constantly.
  5. Pour in the broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
  7. Remove from heat, fluff with a fork, and stir in shredded cheddar cheese until melted and creamy.
  8. Season with salt and pepper to taste. Garnish with fresh parsley if desired.
