1cup long grain white rice
2 tbsp butter
1 small onion, finely chopped
2 garlic cloves, minced
2cups chicken or vegetable broth
1cup shredded cheddar cheese
Salt, to taste
Black pepper, to taste

Instructions
In a medium saucepan, melt butter over medium heat.
Add chopped onion and sauté for about 4 minutes until soft and translucent.
Stir in minced garlic and cook for 1 more minute.
Add the rice and toast it in the butter for 2–3 minutes, stirring constantly.
Pour in the broth and bring to a boil.
Reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
Remove from heat, fluff with a fork, and stir in shredded cheddar cheese until melted and creamy.
Season with salt and pepper to taste. Garnish with fresh parsley if desired.
