Crispy on the outside, fluffy on the inside—these Cheesy Roasted Baby Potatoes are tossed in savory herbs and garlic, then topped with melty cheddar for the ultimate side dish.

Ingredients

  • 2 lbs baby potatoes, halved

  • 4 tbsp olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp paprika

  • 3 garlic cloves, minced

  • 3/4 cup shredded cheddar cheese

 

  • Chopped chives for garnish (optional)

Instructions

  • Preheat oven to 425°F (220°C).

  • Toss potatoes with oil, salt, pepper, paprika, and garlic.

  • Spread on a baking sheet and roast for 20–25 minutes, flipping once.

  • Sprinkle cheese on top and return to oven for 5 minutes until melted.

 

  • Garnish with chives before serving.

Notes

For crispier results, soak potatoes in cold water for 30 minutes before roasting and dry thoroughly.
