1 cup unsalted butter, softened
1/2 cup powdered sugar (plus extra for rolling)
2 tsp almond extract
2 1/4 cups all-purpose flour
1/4 tsp salt
1/2 cup maraschino cherries, finely chopped and patted dry
1/2 cup finely chopped almonds
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy.
Mix in the almond extract until well combined.
In a separate bowl, whisk together the flour and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Fold in the chopped maraschino cherries and almonds until evenly distributed.
Roll the dough into 1-inch balls and place on the prepared baking sheet.
Bake for 12–14 minutes, or until the bottoms are lightly golden (tops will not brown much).
Let cookies cool for 5 minutes, then roll warm cookies in powdered sugar.
Once completely cooled, roll the cookies again in powdered sugar for a snowy effect.
Notes
Dry cherries thoroughly to prevent excess moisture in the dough.
Store in an airtight container at room temperature for up to one week.
