Ingredients

Scale
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh or frozen cherries, pitted and halved
  • 1 tbsp flour (for tossing cherries)

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin pan with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk melted butter, eggs, milk, and vanilla.
  4. Pour wet ingredients into dry and mix until just combined.
  5. Toss cherries with 1 tbsp flour, then gently fold into the batter.
  6. Divide batter evenly into muffin cups.
  7. Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Do not overmix the batter to keep muffins soft and fluffy.
  • Use frozen cherries straight from the freezer—no thawing needed.
  • Add 1/2 tsp almond extract for a bakery-style cherry flavor.
  • Sprinkle coarse sugar on top before baking for a crunchy finish.
