This Cherry Tomato Mozzarella Bruschetta is a vibrant, fresh appetizer featuring juicy cherry tomatoes, creamy mozzarella, fragrant basil, and a drizzle of olive oil and balsamic.

Ingredients

  • 1 pint cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/3 cup fresh basil leaves, torn or chopped
  • 12 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar or glaze
  • 1 garlic clove, minced (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 crusty baguette or 12 crostini slices, toasted (optional)

Instructions

  1. Halve the cherry tomatoes and mozzarella balls. Mince garlic if using.
  2. In a mixing bowl, gently toss together tomatoes, mozzarella, basil, garlic, olive oil, and balsamic vinegar or glaze.
  3. Season with sea salt and freshly ground black pepper to taste. Toss gently to combine.
  4. Spoon the mixture onto toasted baguette slices or serve as a dip in a bowl.
  5. Garnish with extra basil and a drizzle of olive oil or balsamic glaze before serving.
