1 cup rolled oats
2 cups milk or plant-based milk
1/4 tsp salt
1/2 tsp cinnamon (optional)
1 tbsp maple syrup or honey (optional)
2 ripe bananas, sliced
1 tbsp butter or coconut oil
1 tbsp brown sugar
1/4 tsp vanilla extract
Instructions
In a saucepan, combine oats, milk, salt, and cinnamon. Bring to a boil, then reduce heat and simmer for 5–7 minutes, stirring occasionally, until creamy.
Meanwhile, in a skillet over medium heat, melt butter or coconut oil.
Add banana slices and sprinkle with brown sugar. Cook for 2–3 minutes on each side until golden and caramelized.
Stir vanilla extract into the bananas just before removing from heat.
Serve oatmeal in bowls and top with caramelized bananas. Drizzle with maple syrup or honey if desired.
Notes
Use steel-cut oats for a chewier texture (adjust cook time).
Add a sprinkle of nuts or seeds for crunch and extra nutrition.
For a dairy-free version, use plant milk and coconut oil.
