Ingredients

  • 2 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • Juice of 1 lemon

  • Zest of 1 lemon

  • 1 tsp Dijon mustard (optional)

 

  • 1 tbsp chopped parsley, for garnish

Instructions

  1. Slice chicken breasts in half horizontally to make cutlets. Season with salt and pepper.

  2. In a skillet, heat olive oil and butter over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.

  3. In the same skillet, sauté garlic until fragrant. Add broth, scraping up brown bits.

  4. Stir in cream, lemon juice, zest, and Dijon mustard. Simmer until slightly thickened.

  5. Return chicken to skillet, spoon sauce over, and cook for another 2–3 minutes.

  6. Garnish with parsley and serve with lemon wedges.

  • Pairs beautifully with asparagus, rice, or mashed potatoes.

  • For a dairy-free version, substitute coconut cream.
