Chicken Lo Mein

A quick and flavorful stir-fried noodle dish made with tender chicken, vegetables, and a savory lo mein sauce.

  • 8 oz lo mein noodles
  • 1 lb chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 2 cups shredded cabbage
  • 1 cup carrots, julienned
  • 1 red bell pepper, sliced
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook the lo mein noodles according to package instructions, drain, and set aside.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove and set aside.
  3. Add the remaining oil to the pan. Stir-fry garlic and ginger for 30 seconds.
  4. Add cabbage, carrots, and bell pepper. Cook for 3–4 minutes until slightly tender.
  5. Return the chicken to the pan and add the cooked noodles.
  6. Mix soy sauce, oyster sauce, hoisin, sesame oil, sugar, and chicken broth in a small bowl. Pour over the mixture.
  7. Toss everything together and cook for another 2–3 minutes until well coated and heated through.
  8. Top with green onions, adjust seasoning, and serve hot.

Notes

  • You can substitute chicken with beef, pork, shrimp, or tofu.
  • Add more vegetables like mushrooms or snap peas for extra flavor.
  • Use low-sodium soy sauce to control saltiness.
