Ingredients

  • 2 tbsp olive oil or butter

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 6 cups chicken broth

  • 2 cups cooked, shredded chicken

  • 1 1/2 cups egg noodles or fun-shaped pasta

  • 1 tsp dried thyme or Italian seasoning

  • Salt and pepper to taste

 

  • Fresh parsley for garnish

Instructions

  • In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened.

  • Add garlic and cook for 1 minute more.

  • Pour in chicken broth and bring to a gentle boil.

  • Stir in chicken, seasoning, and noodles. Cook until noodles are al dente (about 7–10 minutes).

  • Adjust salt and pepper to taste.

 

  • Serve hot, garnished with fresh parsley.

  • Use rotisserie chicken for convenience.
