Chicken Pasta with Marinara Barramundi is a protein-packed fusion dish combining tender chicken, flaky barramundi, and al dente pasta tossed in a rich marinara sauce. A hearty and flavorful meal perfect for dinner.

Ingredients

  • 2 chicken breasts, sliced
  • 2 barramundi fillets
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 3 cups marinara sauce
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 12 oz pasta (penne or spaghetti)
  • 2 tbsp chopped fresh basil
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken breasts with salt and pepper. In a large skillet, heat 1 tbsp olive oil over medium heat. Cook chicken until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. Season barramundi with salt and pepper. In the same skillet, add 1 tbsp olive oil and sear the barramundi for 3-4 minutes per side until cooked through and flaky. Remove and set aside.
  4. In the same pan, add garlic and onion, sauté until fragrant and translucent, about 3 minutes.
  5. Add marinara sauce, oregano, and red pepper flakes. Simmer for 5-7 minutes to blend flavors.
  6. Add cooked pasta and chicken back to the skillet. Toss to coat in the sauce and heat through.
  7. Flake the barramundi and gently fold into the pasta just before serving to avoid breaking it up too much.
  8. Garnish with fresh basil and Parmesan cheese if desired. Serve warm.

Notes

  • Use fresh or frozen barramundi; make sure it’s fully thawed before cooking.
  • Can be made dairy-free by omitting Parmesan.
  • For extra richness, stir in a splash of cream to the marinara sauce.
