2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon paprika
4 sandwich buns
1/2cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1cup shredded lettuce
1 tomato, sliced
4 slices of cheese (optional)
Pickles (optional)
Instructions
Preheat a grill or skillet over medium heat and drizzle with olive oil.
Season chicken breasts with salt, pepper, garlic powder, and paprika.
Cook chicken for 5–6 minutes per side, or until fully cooked and golden brown. Let rest for 5 minutes, then slice.
In a small bowl, mix mayonnaise, Dijon mustard, and lemon juice to make the sauce.
Toast the sandwich buns lightly if desired.
Spread the sauce on the top and bottom halves of each bun.
Layer the sliced chicken, cheese (if using), lettuce, tomato, and pickles on the bottom half of each bun.
Top with the other half of the bun and serve immediately.
Notes
Grilled or pan-fried chicken both work well for this recipe.
