6 hard-boiled eggs
3 tablespoons mayonnaise
1 teaspoon mustard
1 teaspoon vinegar or lemon juice
Salt to taste
1 teaspoon chili flakes
2 cloves garlic, finely chopped
1 tablespoon oil for sautéing
2 green onions, chopped
Instructions
Peel the hard-boiled eggs and slice them in half lengthwise. Remove the yolks.
In a bowl, mash the yolks with mayonnaise, mustard, vinegar or lemon juice, and salt until smooth.
Spoon or pipe the yolk mixture back into the egg white halves.
Heat oil in a small skillet over medium heat. Sauté the garlic and chili flakes until golden and crisp.
Spoon the garlic-chili oil over the filled eggs.
Garnish with chopped green onions and serve.
Notes
Adjust chili flakes to control spice level.
Use Greek yogurt for a lighter version.
Best served fresh or within a day for optimal flavor.
