5 tablespoons butter, melted
16oz cream cheese, softened
1/2cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
3/4 cup mini chocolate chips
Instructions
Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
Crush Oreo cookies into fine crumbs and mix with melted butter.
Press the mixture firmly into the bottom of the prepared pan to form a crust. Bake for 8–10 minutes, then set aside to cool slightly.
In a mixing bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing until incorporated. Stir in vanilla extract and flour.
Fold in mini chocolate chips.
Pour the cheesecake batter over the pre-baked crust and spread evenly.
Bake for 30–35 minutes, or until the center is set and edges are slightly golden.
Cool completely at room temperature, then refrigerate for at least 2 hours before slicing into bars.
