Chocolate Covered Christmas Cookie Bars are festive dessert bars made with a cookie base, layered with chocolate, and topped with colorful holiday sprinkles. Perfect for gifting or holiday parties.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips (for the dough)
  • 2 cups semi-sweet or milk chocolate chips (for topping)
  • 1 tbsp vegetable oil or coconut oil (for chocolate topping)
  • Holiday sprinkles, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in 2 cups of chocolate chips.
  7. Spread the cookie dough evenly in the prepared baking pan.
  8. Bake for 25–30 minutes or until the edges are golden and a toothpick comes out clean.
  9. Remove from oven and let cool completely in the pan.
  10. Once cooled, melt the remaining 2 cups of chocolate chips with 1 tbsp of oil in the microwave or over a double boiler.
  11. Spread melted chocolate over the cooled cookie bars.
  12. Immediately top with holiday sprinkles before the chocolate sets.
  13. Allow the chocolate to firm up (you can refrigerate for quicker setting), then cut into bars and serve.

Notes

  • You can substitute white chocolate or dark chocolate for the topping.
  • Store in an airtight container for up to one week.
