These Chocolate-Covered Coconut Truffles are bite-sized treats with a creamy coconut filling, enrobed in rich chocolate, and dusted with cocoa powder

Ingredients

  • 2 cups shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 cup butter, melted
  • 1 1/2 cups dark or milk chocolate, melted

 

  • Cocoa powder for dusting

Instructions

  • Mix shredded coconut, condensed milk, vanilla, and melted butter.
  • Roll into small balls and freeze for 15 minutes.
  • Dip in melted chocolate, then place on parchment paper.

 

  • Dust with cocoa powder and chill until firm.

Notes

  • Keep refrigerated for up to a week.

 

  • Use white chocolate for a different twist!
