Ground Beef Mediterranean Salad is a hearty, protein-rich dish that combines seasoned ground beef with fresh vegetables and Mediterranean flavors. It’s a nutritious and refreshing option for a balanced meal.

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 red onion, thinly sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar (optional)
  • Salt and pepper, to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic; sauté until softened.
  2. Add ground beef and cook until browned, breaking it up with a spoon. Season with salt and pepper. Let cool slightly.
  3. In a large bowl, combine cherry tomatoes, cucumber, bell peppers, red onion, and parsley.
  4. Add the cooled ground beef mixture to the vegetables and toss to combine.
  5. Drizzle with lemon juice and red wine vinegar, if using. Mix well.
  6. Top with crumbled feta cheese if desired. Serve chilled or at room temperature.
