1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup milk
1/3 cup fruit jam or preserves (e.g., raspberry, strawberry, or cherry)
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream together the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Add the dry ingredients to the wet mixture alternately with the milk, mixing until a soft dough forms.
Scoop about 1 tablespoon of dough and flatten it slightly. Place 1/2 teaspoon of jam in the center, then top with another small piece of dough and seal the edges to enclose the jam.
Place cookies on the prepared baking sheet about 2 inches apart.
Bake for 10–12 minutes, or until cookies are set around the edges. Let cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
Be careful not to overfill with jam to prevent leaking during baking.
Try using different flavors of jam for variety.
Cookies can be stored in an airtight container for up to 4 days.
