Herb-Crusted Vegan ‘Pork’ Tenderloin with Green Beans is a delicious plant-based alternative made with a savory vegan protein loaf coated in fresh herbs and paired with roasted green beans. A hearty and satisfying dinner that’s both wholesome and cruelty-free.

  • 1 store-bought vegan pork tenderloin alternative or homemade seitan log (about 1 1/2 lbs)
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tsp garlic, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 oz green beans, trimmed
  • 1 tbsp olive oil (for green beans)
  • Salt and pepper to taste (for green beans)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, Dijon mustard, garlic, rosemary, thyme, salt, and pepper to make the herb paste.
  3. Rub the herb mixture over the vegan tenderloin or seitan log.
  4. Place the vegan tenderloin on a lined baking sheet or in a roasting dish.
  5. Roast for 20–25 minutes, or until heated through and slightly crisp on the outside. Let rest for 5 minutes before slicing.
  6. While roasting, toss green beans with olive oil, salt, and pepper.
  7. Spread green beans on a baking sheet and roast for 12–15 minutes, until tender-crisp and lightly browned.
  8. Slice the vegan tenderloin and serve with roasted green beans.
