Chocolate Oat Cookies (No-Bake) are rich, chewy, and easy-to-make treats combining cocoa, oats, and peanut butter into a simple stovetop cookie that sets without baking — perfect for a quick dessert or snack.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 cups quick oats

Instructions

  1. In a medium saucepan, combine butter, sugar, milk, and cocoa powder over medium heat. Stir continuously until it reaches a rolling boil.
  2. Let the mixture boil for 1 minute without stirring, then remove from heat.
  3. Immediately stir in peanut butter, vanilla extract, and salt until smooth.
  4. Add oats and mix until fully combined.
  5. Drop spoonfuls of the mixture onto parchment-lined baking sheets.
  6. Let cookies cool at room temperature for 30–45 minutes until set, or refrigerate for faster setting.

Notes

  • Use quick oats for the best texture; old-fashioned oats will result in chewier cookies.
  • Store in an airtight container at room temperature for up to 5 days or in the fridge for longer freshness.
  • Add-ins like shredded coconut, chopped nuts, or mini chocolate chips can be mixed in after adding oats.
  • Use sunflower seed butter for a nut-free version.
