1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1/2 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup creamy peanut butter
1 cup milk chocolate chips
24 mini peanut butter cups (optional, for center filling)
Instructions
Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
In a bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients.
Stir in peanut butter until fully incorporated.
Scoop about 1 tablespoon of dough into each muffin cup, pressing down slightly in the center.
Bake for 10-12 minutes, until edges are golden.
Immediately press a mini peanut butter cup or a few chocolate chips into the center of each cookie cup.
Let cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
Notes
You can substitute peanut butter cups with a spoonful of melted chocolate and peanut butter mixture.
