Ingredients

Units Scale
  • 2 cups chocolate cookie crumbs (or chocolate graham crackers)
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 3/4 cup smooth peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1 cup dark or semisweet chocolate chips
  • 1/2 cup chopped pecans or mixed nuts
  • 2 tablespoons chocolate shavings (for garnish)
  • Sea salt (optional, for topping)

Instructions

  1. Mix chocolate cookie crumbs and melted butter in a bowl. Press into a lined jelly roll pan or rectangular tray. Chill in the refrigerator.
  2. In another bowl, beat cream cheese and peanut butter until smooth. Add powdered sugar and vanilla, and beat until creamy.
  3. Spread the peanut butter filling evenly over the chilled chocolate base. Return to fridge to firm.
  4. Heat heavy cream until just simmering. Pour over chocolate chips and let sit 1 minute. Stir until smooth to make ganache.
  5. Pour ganache over peanut butter layer and spread evenly.
  6. Sprinkle with chopped pecans, chocolate shavings, and sea salt if using.
  7. Chill for at least 4 hours or overnight until set.
  8. Carefully roll if using a jelly roll method, or slice into bars if making as layered squares. Serve chilled.

Notes

  • Use crunchy peanut butter for extra texture.
  • Swap peanut butter with almond or sunflower seed butter for dietary needs.
  • Add a swirl of Nutella or chocolate spread in the filling for extra depth.
  • Try a thin layer of jam for a PB&J twist.
  • Use dairy-free alternatives for a vegan version.
  • Serve chilled and slice with a hot, clean knife for neat pieces.
